It seems like no one ever talks about meal prepping anything other than meat or veggies and I am here to tell you that there are no rules in meal prepping. Today’s post is exhibit A, a meal prepping post about snacks! I seriously couldn’t live without snacks, especially chocolate snacks. Because of my work schedule I can’t just make cookies when I feel like and I have to plan to make my treats, and if I don’t have chocolate/treats ready made then I fade away into nothing. No joke. Ask my mom, she’d say grumpy and weepy…but same thing.
Now just warning you I don’t always make treats that are my own recipe, I love to try out recipes that other health bloggers have created. And before anyone asks, yes I always make sure the snacks I’m making are a healthy alternative. Not everyone has to do that but it’s something that’s important to me so that’s what you’ll be getting from my blog.
Let’s breakdown what I made this last week.
First, I made Allie’s Eats Vanilla Espresso Almond Butter, this stuff is CRACK! I was kind of skeptical because I’m not a huge AB person but this!!! (heart eyes and all that) Even my parents and siblings said this was so good.
Next, I made Jeannette Ogden‘s Banana Chia Bread. I love to make this as a grab and go treat in muffin cups. Another way I like to eat this is to heat up the bread and butter some of that vanilla espresso almond butter (above) on it!
Last, but certainly not least, I baked Rachel Mansfield’s Paleo Chocolate Chip Pumpkin Brownies. Chocolate-y, pumpkin-y goodness!! So yummy for the colder months. I made these for thanksgiving for the first time and made them again the following week. In Rachel’s recipe she says you can use whatever nut butter you want, but in my experience almond butter is the best tasting with the pumpkin!
