ROASTED VEGTABLES

Happy Friday!! I’m here to bring you yet another recipe, I promise I have more posts planned that aren’t food related, but since we’re here I’ll just tell you real quick about these awesome baked/roasted veggies I have been loving!!

I really like vegetables, no lies. I eat spinach like chips and have vegetables at every meal. When I was a toddler I would get into the fridge and eat green peppers like an apple, you can even ask my mom. So obviously when this whole roasting, baking, and steaming your vegetables blew up my insta stories from the health and food bloggers I followed I HAD to try it out. And lemme just say I’m hooked.

All you need is vegetables that will cook well, for this I just used cauliflower, broccoli, and yams (I use yams over sweet potatoes because they are richer in nutrients) but you could also use brussles sprouts, asparagus, zucchini, etc! Cut your veggies up and coat with olive oil (you can sub in avocado oil here), then sprinkle with salt and pepper and mix it all up! I like to mix them in a bowl. Then line your cookie sheet with parchment paper and put them in the oven at 425 for twenty minutes.

That’s it. Best snack/meal ever! I have a feeling I’m going to be the most obnoxious mother ever like “eat your plate of veggies kidlets!” hahaha. I can’t right now. Hope you enjoyed this post and let me know if you try this out!
