I was left with the task of shopping for and preparing all my meals this week (I’m not complaining) and I wanted to find something that I could prep and just stick in the fridge and then heat it up at work or home. Obviously I wanted something healthy and that I could add a variety of vegetables to. The easiest thing for me to do was create something with grains/carbs, protein, and a bunchhhhh of vegetables and then this bowl of goodness was born. Seriously, it’s delicious…and so easy! Get ready for this recipe, I kind of eyeballed everything so these directions aren’t exact and kind of all over the place, add as much as you want of each kind of food!
First, I made quinoa as my base. You can make your base brown rice, spaghetti squash, etc.
Then I cooked my meat, I used Italian sausage but any kind of meat would be just as tasty!
Last, I just sliced up different vegetables. I used tomato, peppers and avocado, I meant to put zucchini but I totally forgot and I would probably add a handful of spinach as well! NOTE I did not cook the vegetables, you can, but I wanted to keep all the nutrients I possible could!
And that’s it! So easy and healthy. Love cooking different meals and I look forward to trying more healthy recipes out! If you try this let me know how you liked it!
